Season the chicken soup according to your own taste. Use a hand blender to turn it into a smooth soup, taking care not to allow the hot liquid to splash you. Its topped with crispy, fried tortilla strips and shredded cheese to form a tasty and satisfying meal. Turn it down to a lower heat and simmer for around 20 minutes, or until the potatoes are soft. Say olé to this Mexican-style chicken tortilla soup that features tomatoes, lime juice, jalapeño peppers, green chiles, cilantro, green onion, carrots, and corn. Simply add all the ingredients to your soup maker (leave any cream or crème fraiche until the end) and put the lid on. A lot of the time I won’t bother adding any and it still tastes great. Also, cream or crème fraiche will also make it smoother and give you more of a ‘Cream of Chicken’ style soup, but this is totally optional. The potatoes thicken up the soup and make it smoother – you can add more or less, depending on your own taste. I suppose because it isn’t as tender as it is when it is slow cooked. I do notice a different texture when I make chicken soup this way though, kind of like a more ‘grainy’ texture. If I’m craving a chicken soup and we haven’t had a roast chicken I’ll just cook up some chicken breasts and shred them. If you don’t have leftover chicken to use up you can still easily make chicken soup – just cook up some chicken of your choice. You can also use the juices to make some homemade chicken stock – it tastes amazing. If you’ve never cooked your chicken in a slow cooker you really should try it – the meat is so soft. Side Note: I usually cook our chicken in the slow cooker, this means that we can easily get all the meat off the bone – there really is no food wasted. It’s the perfect way to use up all the meat, assuming it doesn’t get swiped by the kids for their school sandwiches!
